Brakes Launches First Ever 100% Scottish Scampi Foodservice Range

Leading Foodservice provider Brakes has launched the first wholesale range of 100% Scottish scampi. Available from 1st October, the range will enable caterers to maximise sales and build customer loyalty by helping them to serve a consistently high quality product with strong provenance.

Made using only Scottish langoustines which are landed, processed and packed in Scotland by Brakes’ partners Dawnfresh, the new own-brand scampi range has been benchmarked against competitors to provide caterers with confidence that they are serving a high quality, great-tasting product their customers will enjoy.

With a clear tiering structure in place to make it easier to for operators to understand how scampi may be used on a variety of different menus, the range includes formed, wholetail and single wholetail scampi options.

A series of menu suggestions have also been created by the Dawnfresh Development Chef team, in conjunction with Brakes, to demonstrate the versatility of scampi and that it can be served in a variety of ways, including sharing, and fast/casual dining style dishes.
