Clean Cooking, in association with Vito Oil Filters

If fried food is part of your menu, then operators have a duty to prepare it in good, clean oil. CateringScotland.com looks at how one major hotel chain has slashed its oil costs while maintaining its cooked product at optimum quality for longer…

In terms of sustainability in the foodservice sector, one area which continues to receive increased attention is the oil in which food is cooked.

Fortunately, there have been some significant developments in this area of the market, not least from Vito, one of the foremost providers of oil filtration systems for commercial use.

Deployed by a number of businesses in the UK, Vito equipment promotes positive results in terms of cost, time and environmental savings.

One such chain benefitting from the technology is Crowne Plaza. Its London Docklands hotel – which caters for up to 300 guests each day – opted for Vito oil filter machines to ensure the quality and consistency of its food.

Offering four-star accommodation with over 200 bedrooms and the Docklands Bar & Grill restaurant, the hotel invested in a Vito 80 machine following a recommendation from The Dorchester, which had identified the equipment as the ideal tool to reduce oil consumption, remove carbonised particles and achieve healthier fried food.

Pedro Da Silva of the International Hotels Group, which owns the Crown Plaza, explains: ‘We filter the oil twice a day; after breakfast and before service in the evening.’

‘As well as helping us to produce cleaner-tasting food, Vito has saved us over £135.00 a week on oil, reducing our costs by 55 percent.’

Using deep fat fryers for hash browns, fish and chips and onion rings for its gourmet burgers, chefs at The Docklands Bar & Grill find the Vito machines easy to use.

The Vito 80 system specified for Crown Plaza is ideal for all gas and electric fryers from 20 litres upwards, or heavily used fryers.

Moreover, the brand also offers other options depending on the requirements of the customer, including a Vito 50 system which is suitable for all gas and electric freestanding fryers with medium use (up to 20 litres’ capacity).

In a further development which has underlined its environmental credentials, Vito has just become an approved supplier of the Sustainable Restaurant Association (SRA).

Rob Frank, MD of Vito, explains how their systems contribute to a healthier environment: ‘Our filters are completely biodegradable as they are made from cellulose, so you won’t pollute the environment.

‘As well as saving up to 50% of a user’s oil, Vito oil filters  also help to offset emissions caused by the production and transportation of frying oil.

‘By using Vito you are reducing the demand for farming crops required for the product,’ he adds.
