Aberdeen Caterer Launches MCA-Approved Training Centre

Aberdeen caterer and CIS Excellence Award Hospitality Educator of the Year sponsor, Entier, has launched the only MCA-approved training centre in the north of Scotland

Designed for chefs and cooks on board commercial sea-bound vessels, the certificate is legally required as per the Maritime Labour Convention (MLC 2006) and provides an objective assessment of chefs’ skills in a controlled environment in order to verify their cooking abilities across a range of techniques, using a variety of foods.

Having recently gained the accreditation making them the only provider North of Scotland, the company’s £1m  facility at their facility in Westhill was purpose-built to house a production facility and state-of-the-art training academy kitchen for the recruitment, development and training of culinary staff.

The course, which includes a practical assessment and theory exam, will be assessed by Entier’s Executive Chef, Ali MacSween, and will offer candidates an approved certificate and qualification to work on sea-bound vessels across the globe.  Covering food and knife health and safety, healthier diets, allergens and food intolerance, the assessment requires the candidate to produce a three-course meal in three hours, followed by a nautical cook’s theory assessment.

‘Ali is an accomplished chef and motivated trainer, making him an ideal assessor in our training academy.

‘As the only provider in the North of Scotland our training centre will undoubtedly bring benefits to chefs who require this certification. For many, the implications of travel and accommodation costs to gain this qualification elsewhere are prohibitive and so we hope that this centre will provide an option closer to home.’
