Brakes Scotland has signed a deal with a leading Scottish venison producer to supply several fresh wild venison lines to the company’s Scottish product range.

Highland Game’s Managing Director, Christian Nissen said: ‘We are delighted that Brakes, as one of the country’s leading distributors to the restaurant, catering and foodservice industry, will now offer a key selection of our Scottish wild venison range to their customer base in Scotland. It has been an interesting and encouraging experience to work alongside the Brakes team to develop the right cuts and specifications for their market, and we are looking forward to the launch.’

Brakes Scotland’s Operations Director, John McLintock (pictured left with Highland Game’s Ingela Nissen), added: ‘Venison has become a popular red meat on menus throughout the country and it made sense for Brakes to have a genuine Scottish offering. We were particularly impressed by the level of care that goes into preparing the product, from the vet’s inspection through to the in-house team of butchers. And it goes without saying that the venison tastes beautiful because of its rich flavour and lean gamey texture.’

Founded in 1997 when venison was not widely consumed in the UK, Highland Game has over the last two decades increased the profile and highlighted the health properties of the meat. In turn the company has presided over a steady and ongoing rise in at-home consumption levels, as consumers increasingly recognise the health benefits of the meat.

Containing more iron than other red meats but less than half the fat of beef and even less fat than chicken, Highland Game venison is produced at the company’s Dundee headquarters and the firm works with supply partners including the Forestry Commission to achieve a consistently superior quality venison product.
