A Germane Solution for 45 Jermyn Street at Fortnum’s

Looking for proven, high quality foodservice equipment, CCE Group approached Valentine Equipment and Cuisinequip to assist in the design of an island induction cooking suite to serve the new 45 Jermyn St, formerly the Fountain Restaurant at Fortnum & Mason (pictured below).


Working alongside executive head chef Sydney Aldridge in CCE’s kitchen design studio, Valentine’s Steve Elliott helped developed the bespoke range, which included: a Valentine EVO 2525 Turbo fryer with pumped oil filtration; 8 x 8kw induction zones; pan racks; a Frima 112T vario cooking centre; a half-ribbed and half-plain griddle; Adande refrigerated drawers; and a quick-heat Hatco salamander.

Raised off the ground adjacent to the cook suite around the walls, the ovens and other refrigeration are incorporated into an ergonomic design which allows for the maximum number of free-flowing workstations.


Head chef Lee Streeton said: ‘The equipment is state-of-the-art and the CCE team are consummate professionals who deliver on time and on budget.

‘They understand our business and are great people to work with.’

With a five-year warranty on the induction system, the range is supported by Valentine service and spares.
