Levy Restaurants UK, the sports, leisure and hospitality catering specialists, has signed up to the Sustainable Cities Fish Pledge, committing to buying, serving and promoting only sustainable fish at all of its venues across the UK, from Hever Castle in Kent to the SECC Hydro in Glasgow.
The pledge requires the company to:
- State its commitment: Tell customers and the public that it is developing and implementing a policy on seafood sustainability in its business.
- Gather information: Assess and monitor the environmental sustainability of the seafood it serves.
- Source sustainably: Make sustainable seafood choices. This will include: Avoiding the worst; Promoting the best; Improving the rest:
- Communicate clearly
- Influence wider progress
