Unilever Food Solutions Releases Allergens Guide For Caterers

The CIS Excellence Awards Restaurant of the Year sponsor, Unilever Food Solutions, has released new allergens information for the catering industry. From 13th December this year, all caterers will be required by law to answer any questions from consumers about allergens that could be present in the food they sell.
Under the new rules, operators must be able to provide information on allergens including eggs, milk, shellfish, molluscs, fish, peanuts, sesame, soya, sulphur dioxide, nuts, cereals containing gluten, celery, mustard, and lupin.
In order to help companies to fully understand the new rules, the company has produced a simple-to-use allergen and diets guide for professional caterers, with practical advice and detailed information about the 14 allergens.
